Ederki: 80 years of Basque cooking in a jar

Founded in 1942 in the heart of the Basque Country, Maison Ederki produces preserves and fine food products from local terroir. A local brand — not a holiday souvenir.

Some brands are familiar without being truly known. Ederki is one of them. Most of us have a jar of axoa or a tin of chipirones somewhere in the cupboard, without necessarily knowing that behind it stands an 18-person company rooted in the Basque Country for more than eight decades.

Founded in 1942, Maison Ederki is a local house that has been producing high-quality preserves since the post-war years. Not a large industrial group, not a brand acquired by a fund — a genuinely local operation.

What Ederki actually does

The mission is to source the best of the Basque terroir to offer premium grocery products while supporting local agriculture. In practice, this means long-term partnerships with regional producers: charcuterie comes from Maison Montauzer in Bardos; wines are sourced through the Cave d’Irouleguy in Saint-Étienne-de-Baïgorry; spirits come from Domaine Brana in Saint-Jean-Pied-de-Port.

The ranges worth knowing

Ederki covers a wide range of tastes: vegetables, fish, meat, a certified organic line, condiments, oils, desserts, as well as apéritif drinks and wines.

The Authentique range is the core of the catalogue: stuffed piquillos, chipirones in sauce, veal axoa, Basque chicken, piperade. Everyday dishes in a jar, made without preservatives or additives. Vegetables are harvested in France and Navarre; meats come from the south-west of France.

The Biologique range applies the same logic in certified organic form: pâtés, soups, oils, vegetables.

The Gourmet range steps up with foie gras, duck confit, fish and shellfish rillettes — for meals that deserve more than an ordinary cupboard.

Quality, seriously

Several types of controls are carried out: on all raw materials before production, in the field for plant-based products, and on finished products to verify the stability of every batch. Daily sourcing reduces the time between harvest and jarring — which makes a real difference in taste.
